- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ยฝ teaspoon onion powder
- ยฝ teaspoon dried thyme (optional)
- 1 cup all-purpose flour (for dredging)
- ยผ cup vegetable oil or bacon drippings (for frying)
For the Gravy
- 1 medium onion, thinly sliced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken broth
- ยฝ cup heavy cream or evaporated milk
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
- ยฝ teaspoon garlic powder (optional)
Directions
1. Season & Dredge the Chicken
Pat chicken pieces dry. In a small bowl, combine salt, pepper, paprika, garlic powder, onion powder, and thyme.
Rub the seasoning all over the chicken.
Place flour on a shallow plate and dredge each piece, shaking off the excess. This coating helps thicken the gravy later.
2. Pan-Fry the Chicken
Heat oil or bacon drippings in a large skillet over medium-high.
Add chicken, skin-side down, and fry for 6โ7 minutes per side, until golden brown.
(It doesnโt need to be fully cooked yet.)
Remove chicken and set aside.
3. Cook the Onions
In the same skillet, reduce heat to medium.
Add sliced onions and cook 5โ6 minutes until soft and golden.
Add butter and let it melt into the onions.
4. Make the Gravy
Sprinkle flour over the onions and stir continuously for 1 minute to create a roux.
Slowly pour in chicken broth while whisking, scraping up browned bits.
Add cream and Worcestershire sauce.
Simmer for 3โ4 minutes until thickened.
Add salt, pepper, and garlic powder (if desired).
5. Smother the Chicken
Return the chicken pieces to the skillet, nestling them into the gravy.
Reduce heat to low, cover, and simmer for 30โ35 minutes, or until chicken is tender and cooked through.
6. Serve
Serve hot over:
- White rice
- Mashed potatoes
- Egg noodles
- Biscuits
- Or creamy grits
Spoon extra gravy on top โ thatโs the Southern way.
Chefโs Tips
- Bacon drippings add authentic depth to the gravy.
- Add mushrooms for a heartier variation.
- If gravy gets too thick, thin with a splash of chicken broth.
- If using boneless chicken, reduce simmer time to 20 minutes.
