Ingredients
Meat & Vegetables
- 1 pound ground beef, ground pork, or a mixture
- Β½ pound chicken livers, finely minced (optional but traditional)
- 1 small onion, finely diced
- 1 green bell pepper, diced
- 2 celery ribs, diced
- 3 cloves garlic, minced
Seasoning & Aromatics
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- Β½ teaspoon black pepper
- Β½ teaspoon dried thyme
- Β½ teaspoon salt (adjust to taste)
- 1 bay leaf
- 1 teaspoon Worcestershire sauce (optional)
Rice & Broth
- 1 Β½ cups long-grain white rice
- 3 cups chicken broth
- 2 tablespoons butter or vegetable oil
Finishing
- 2β3 green onions, sliced
- Fresh parsley, chopped (optional)
Directions
1. Brown the Meat
Heat a large skillet over medium-high heat.
Add ground meat and cook until browned, breaking it into small pieces as it cooks.
If using chicken livers, stir them in now and cook 3β4 minutes more, until fully cooked.
Drain excess fat if needed.
2. Add the Vegetables
Add the diced onion, bell pepper, celery, and garlic to the skillet.
Cook 5β7 minutes, stirring often, until vegetables soften and the mixture becomes aromatic.
3. Season the Base
Stir in Cajun seasoning, paprika, black pepper, thyme, salt, bay leaf, and Worcestershire sauce.
Mix well to coat the meat and vegetables with the seasoning blend.
4. Add Rice & Toast
Pour the uncooked rice directly into the skillet.
Stir for 1 minute to coat the grains and lightly toast them β this enhances flavor and prevents mushiness.
5. Add Broth & Simmer
Pour in chicken broth and add butter.
Bring the mixture to a boil, then reduce heat to low.
Cover and simmer 20 minutes, or until rice is tender and liquid is absorbed.
Remove from heat and keep covered 5 additional minutes to steam.
6. Fluff & Finish
Remove bay leaf.
Fluff rice gently with a fork.
Stir in sliced green onions and parsley just before serving.

Chefβs Tips
- Chicken livers add authentic flavor, but you can omit them if you prefer.
- For a richer dish, substitute half the ground meat with crumbled breakfast sausage.
- Long-grain rice works best β other types may become too soft.
- If you like heat, add cayenne pepper or a splash of Louisiana hot sauce.
