  • 1 can (12 oz) evaporated milk
  • 1 cup heavy cream
  • 2 large eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon dry mustard (optional, for depth)
  • 2 tablespoons butter (for greasing the pan)

Directions

  1. Preheat the oven to 350°F (175°C). Lightly butter or spray a 9×13-inch baking dish and set aside.
  2. Boil the pasta: Bring a large pot of salted water to a boil. Add macaroni and cook until just al dente (about 6–7 minutes). Drain well and set aside.
  3. Make the cheese base: In a large saucepan, melt 4 tablespoons of butter over medium heat. Stir in the evaporated milk, heavy cream, and eggs until smooth.
  4. Add seasoning: Whisk in salt, pepper, smoked paprika, and dry mustard (if using). Stir until well combined.
  5. Mix in the cheese: Add about 2½ cups of cheddar, 1½ cups of Colby Jack, and ½ cup of mozzarella into the mixture. Stir until melted and creamy — but don’t boil it.
  6. Combine with pasta: Pour the cooked macaroni into the cheese sauce and stir gently until all noodles are well coated.
  7. Layer and top: Pour half of the cheesy pasta into the prepared baking dish. Sprinkle with half of the remaining cheeses. Add the rest of the pasta, then top with the remaining shredded cheese.
  8. Bake: Place uncovered in the oven and bake for 30–35 minutes, or until bubbly and golden brown on top.
